- 1 ½ cups graham cracker crumbs
- ½ cup melted butter
- 16 oz cream cheese, softened
- ½ cup granulated sugar
- 1 teaspoon lime zest
- 2 tablespoons lime juice
- 1 teaspoon vanilla extract
- ½ cup heavy cream, whipped
- 2 cups blueberries
- 2 tablespoons sugar
- 1 tablespoon cornstarch, dissolved in 2 tablespoons water
Instructions
- Mix graham cracker crumbs and melted butter; press into an 8×8 baking dish.
- In a bowl, beat cream cheese and sugar until smooth. Add lime zest, lime juice, and vanilla; fold in whipped cream.
- Spread filling over crust; refrigerate.
- In a saucepan, cook blueberries, sugar, and cornstarch until thickened. Cool.
- Spread topping over filling and refrigerate for 3 hours.
- Slice into bars and enjoy!
