Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup melted butter
  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 1 teaspoon lime zest
  • 2 tablespoons lime juice
  • 1 teaspoon vanilla extract
  • ½ cup heavy cream, whipped
  • 2 cups blueberries
  • 2 tablespoons sugar
  • 1 tablespoon cornstarch, dissolved in 2 tablespoons water

Instructions

  1. Mix graham cracker crumbs and melted butter; press into an 8×8 baking dish.
  2. In a bowl, beat cream cheese and sugar until smooth. Add lime zest, lime juice, and vanilla; fold in whipped cream.
  3. Spread filling over crust; refrigerate.
  4. In a saucepan, cook blueberries, sugar, and cornstarch until thickened. Cool.
  5. Spread topping over filling and refrigerate for 3 hours.
  6. Slice into bars and enjoy!

Notes

Chill the bars thoroughly to ensure they’re perfectly set for clean slicing. Garnish with extra lime zest for a fresh pop of color!
