Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy (2-3 minutes).
  3. Add the egg and vanilla extract, mixing until fully combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms.
  5. Gently fold in the blueberries. If using frozen blueberries, work quickly to prevent the dough from becoming too wet.
  6. Scoop the dough onto the prepared baking sheet, spacing the cookies about 2 inches apart.
  7. Bake for 10-12 minutes, or until the edges are set but the centers remain soft.
  8. Remove the cookies from the oven and allow them to cool for 5 minutes on the baking sheet. Transfer to a wire rack to cool completely.
