- 3/4 cup granulated sugar
- 4 large eggs

- 1/2 cup fresh or jarred cherries, chopped (plus more for topping)
- 4 oz semi-sweet chocolate, chopped
- 1/4 cup heavy cream (for ganache)
- Chocolate curls (for garnish)
Instructions
- Preheat the oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper, leaving extra on the sides for easy removal.
- In a bowl, sift together flour, cocoa powder, and a pinch of salt. Set aside.
- Beat eggs and granulated sugar with an electric mixer until light and fluffy (about 5 minutes). Gently fold in the dry ingredients, then stir in vanilla extract.
- Pour the batter into the prepared pan, spreading it evenly. Bake for 10-12 minutes, or until the cake springs back when touched.
- Turn the cake onto a clean kitchen towel dusted with powdered sugar. Remove the parchment paper and roll the cake with the towel from the short end. Let it cool completely.
- Beat heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Gently fold in chopped cherries.
- Unroll the cooled cake, spread the whipped cream filling evenly, and reroll tightly. Place seam-side down on a serving platter.
- Melt chocolate and heavy cream together to make ganache. Pour over the cake roll and let it drip naturally.
- Garnish with whipped cream swirls, fresh cherries, and chocolate curls. Refrigerate for at least 1 hour before slicing.
