Ingredients

  • 1 cup fresh spinach (or 1/2 cup thawed, drained frozen spinach)
  • 1/2 cup shredded mozzarella or crumbled feta
  • 1/4 cup milk (or dairy-free alternative)
  • 1 tablespoon olive oil or butter
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional add-ins: diced tomatoes, sautéed onions, chopped herbs

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9-inch oven-safe skillet or baking dish.
  2. Sauté fresh spinach in a bit of oil until wilted. If using frozen, ensure it’s fully drained.
  3. In a bowl, whisk together eggs, milk, salt, and pepper.
  4. Stir in spinach, cheese, and any desired add-ins.
  5. Pour the mixture into the prepared pan, spreading evenly.
  6. Bake for 22–25 minutes, or until the center is set and the top is lightly golden.
  7. Let cool for 5 minutes before slicing and serving.
