- 1 lb large fresh strawberries
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 tsp vanilla extract
- 1–2 tbsp heavy cream (optional)
- 1/4 cup graham cracker crumbs
- Fresh mint leaves (optional)
- Extra small strawberries (optional)
Instructions
- Wash strawberries and pat dry. Cut off the tops to create a flat base, and gently hollow out the centers.
- In a mixing bowl, beat softened cream cheese, powdered sugar, and vanilla until smooth and fluffy. Add heavy cream if needed to loosen.
- Transfer filling into a piping bag with a star tip (or ziplock bag with snipped corner).
- Pipe cheesecake filling into each strawberry.
- Sprinkle with graham cracker crumbs.
- Garnish with mint leaves and small strawberries if desired.
- Chill for 30 minutes before serving.
