1 lb ground turkey

2 teaspoons olive oil

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

3 tablespoons soy sauce

2 tablespoons hoisin sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

3 green onions, chopped

1/2 cup water chestnuts, finely chopped (optional)

1 red chili or 1/2 teaspoon chili flakes

1 head butter lettuce, separated and washed


Instructions

1. Wash and dry the lettuce leaves thoroughly. Mince garlic and ginger, and chop green onions and water chestnuts if using.

2. Heat olive oil in a skillet over medium heat. Sauté garlic and ginger for 1 minute until fragrant.

3. Add ground turkey to the skillet. Break it apart and cook until no longer pink, about 6–8 minutes.

4. Stir in soy sauce, hoisin sauce, rice vinegar, and sesame oil. Simmer for 2–3 minutes to meld flavors.

5. Add chopped water chestnuts (if using), half the green onions, and chili or chili flakes. Cook another 2–3 minutes.

6. Spoon the turkey mixture into lettuce cups. Top with remaining green onions and extra chili if desired.

7. Serve immediately while hot and crisp, or set out components for DIY assembly.

Notes

Make sure to dry your lettuce leaves completely to avoid soggy wraps.

Adjust the sauce to your taste—more soy sauce for salt, hoisin for sweetness, or vinegar for brightness.

Chill the lettuce in cold water before serving for extra crispness.
