Ingredients

Scale

2 ½ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

1 ½ teaspoons cinnamon

¼ teaspoon nutmeg

1 cup granulated sugar

½ cup brown sugar

2 large eggs

½ cup unsalted butter, melted

1 cup plain yogurt or sour cream

1 teaspoon vanilla extract

3 cups peeled and chopped apples (mix of tart and sweet)

Optional ½ cup chopped walnuts or pecans

Instructions

1. Peel, core, and slice or dice the apples. Toss them with cinnamon and sugar if desired and set aside.

2. In a large bowl, whisk together melted butter, granulated sugar, brown sugar, eggs, and vanilla extract until smooth. Stir in the yogurt or sour cream.

3. In a separate bowl, sift together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

4. Gradually fold dry ingredients into wet mixture. Stir gently until just combined.

5. Fold in the apples and nuts if using. Do not overmix.

6. Pour batter into a greased 9-inch round cake pan or bundt pan. Tap gently on counter to release air bubbles.

7. Bake at 350°F (175°C) for 50–60 minutes, or until a toothpick inserted into the center comes out clean.

8. Let cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely.

9. Drizzle with caramel sauce or dust with powdered sugar before serving.

Notes

Use a mix of apples like Granny Smith and Honeycrisp for best flavor and texture.

To prevent apples from sinking, lightly coat them with flour before mixing into batter.

Cake stays moist for several days and is even better the next day.
