2 tablespoons olive oil

1 tablespoon unsalted butter

1 medium yellow onion, finely chopped

3 cloves garlic, minced

10 ounces cremini or white mushrooms, sliced

1 tablespoon all-purpose flour

1 tablespoon Dijon mustard

1 cup beef broth

0.5 cup sour cream (full-fat)

1 teaspoon Worcestershire sauce (optional)

Salt and freshly ground black pepper, to taste

Chopped fresh parsley, for garnish


Instructions

1. Slice beef thinly against the grain and prep all ingredients.

2. Heat 1 tablespoon olive oil in a skillet over medium-high heat. Sear half the beef until browned, about 1 minute per side. Remove and repeat with remaining beef.

3. In the same pan, add butter and remaining oil. Sauté onion for 3–4 minutes until soft. Add garlic and cook for 30 seconds.

4. Add mushrooms and cook for 5–7 minutes until browned and moisture evaporates.

5. Sprinkle flour over mushrooms and stir. Cook for 1 minute, then add beef broth slowly while stirring. Add mustard and Worcestershire. Simmer 3–4 minutes.

6. Reduce heat to low and stir in sour cream. Mix gently until sauce is smooth.

7. Return beef (and juices) to skillet. Stir and warm through for 2–3 minutes.

8. Taste and adjust seasoning. Garnish with parsley and serve hot over noodles, rice, or mashed potatoes.

Notes

Use full-fat sour cream to prevent curdling and enhance creaminess.

Sear beef in batches to avoid steaming and lock in flavor.
