- 1 lb ground beef (85/15 or 90/10)
- 1 cup sliced bell peppers (red, green, yellow, or orange)
- 2 cups cooked white rice (preferably day-old)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 2 tbsp soy sauce
- 1 tbsp tomato paste
- 1 tsp smoked paprika
- 1/2 tsp ground cumin
- 1/2 tsp black pepper
- Salt to taste (start with 1/4 tsp)
- Optional: red pepper flakes or hot sauce
- Optional toppings: green onions, cilantro, avocado, lime, cheese, sriracha
Instructions
- Prep all ingredients: dice onion, mince garlic, slice bell peppers, cook rice if needed.
- In a large skillet, heat olive oil over medium-high. Add ground beef and cook until browned, breaking it apart (6–8 min). Season lightly.
- Push beef to the side. Sauté onion and garlic on the other side until fragrant (1–2 min), then mix together.
- Add sliced bell peppers and stir. Cook for 4–5 min until just tender.
- Stir in tomato paste, soy sauce, paprika, cumin, pepper, and red pepper flakes if using. Cook 2 min.
- Add cooked rice and stir to combine. Cook another 2–3 min to let flavors meld.
- Serve hot, topped with garnishes of choice.
