Ingredients

Scale

For the Chicken:

  • 2 large chicken breasts, cut into bite-sized pieces
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1 cup panko breadcrumbs
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 egg, whisked
  • Vegetable oil, for frying

For the Bang Bang Sauce:

  • ½ cup mayonnaise
  • ¼ cup sweet chili sauce
  • 1 tablespoon sriracha (adjust to taste)
  • 1 teaspoon honey
  • 1 teaspoon lime juice

Instructions

  1. Marinate the Chicken – In a bowl, soak the chicken pieces in buttermilk for at least 20-30 minutes to ensure tenderness.
  2. Prepare the Breading – In a shallow dish, mix flour, panko breadcrumbs, garlic powder, onion powder, smoked paprika, salt, and black pepper. In another bowl, whisk the egg.
  3. Coat the Chicken – Remove the chicken from the buttermilk, let excess liquid drip off, then dip into the whisked egg. Coat each piece in the flour and panko mixture, pressing firmly for a crispy texture.
  4. Fry the Chicken – Heat vegetable oil in a deep pan to 350°F (175°C). Fry the chicken in batches for 4-5 minutes or until golden brown and fully cooked. Drain on a wire rack or paper towel-lined plate.
  5. Make the Bang Bang Sauce – In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and lime juice until smooth. Adjust spice level as needed.
  6. Toss and Serve – Drizzle the sauce over the crispy chicken or toss the pieces for full coating. Garnish with chopped green onions or sesame seeds if desired. Serve immediately.
