Ingredients
For the Chicken:
- 6 boneless, skinless chicken thighs
- 2 tablespoons vegetable oil
- Salt and pepper to taste
- ½ teaspoon garlic powder
For the Bang Bang Sauce:
- ½ cup mayonnaise
- 2 tablespoons Thai sweet chili sauce
- 1 tablespoon sriracha
- 1 tablespoon honey
- 1 teaspoon rice vinegar (optional)
For Serving & Garnish:
- Cooked white rice
- 2–3 green onions, chopped
Instructions
- Pat chicken thighs dry with paper towels. Season both sides with salt, pepper, and garlic powder.
- In a small bowl, whisk together all sauce ingredients: mayonnaise, sweet chili sauce, sriracha, honey, and rice vinegar. Set aside.
- Heat oil in a large skillet over medium-high heat. Once hot, add chicken thighs smooth-side down.
- Sear each side for 4–5 minutes, or until golden and fully cooked through (internal temperature should reach 165°F).
- Lower heat and spoon the bang bang sauce over each piece. Simmer for 1–2 minutes until warmed through and well coated.
