Ingredients

Scale

2 boneless skinless chicken breasts

0.5 cup all-purpose flour

2 large eggs beaten

1 cup panko breadcrumbs

0.5 teaspoon garlic powder

0.5 teaspoon paprika

Salt and pepper to taste

2 tablespoons vegetable oil or cooking spray

1 cup jasmine or sushi rice

2 cups water or chicken broth

Pinch of salt

1 cup shredded lettuce

0.5 cup shredded carrots

0.5 cucumber thinly sliced

2 green onions chopped

0.25 cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon sriracha

1 teaspoon honey or sugar

1 teaspoon rice vinegar or lime juice

Instructions

1. Rinse rice under cold water until clear. Combine with water or broth and salt. Cook until fluffy, then rest 5 minutes.

2. Slice chicken breasts lengthwise for thinner cutlets. Season with salt, pepper, garlic powder, and paprika.

3. Dredge chicken in flour, dip in egg, then coat in panko breadcrumbs.

4. Pan-fry in oil 3–4 mins per side or air fry at 400°F for 12–15 mins, flipping halfway. Let rest before slicing.

5. Mix mayonnaise, chili sauce, sriracha, honey, and vinegar in a bowl to make the bang bang sauce.

6. Assemble bowls with rice, lettuce, carrots, cucumbers, and sliced chicken.

7. Drizzle with bang bang sauce and garnish with chopped green onions.

8. Serve immediately or store components separately for meal prep.

Notes

Let the chicken rest for 5 minutes after cooking to keep it juicy and the crust intact.

Store sauce and veggies separately if prepping ahead to keep everything fresh and crunchy.

Swap chicken with tofu or shrimp for a vegetarian or pescatarian variation.
