Ingredients

1 ½ lbs chicken tenders or boneless chicken breasts, cut into strips

1 cup buttermilk

1 cup all-purpose flour

½ cup cornstarch

1 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

½ tsp salt

½ tsp ground black pepper

Vegetable oil, for frying

½ cup mayonnaise

¼ cup Thai sweet chili sauce

2 tbsp honey

1 tbsp Sriracha

1 tsp rice vinegar or lime juice

Chopped fresh parsley or green onions (optional)

Red pepper flakes (optional)


Instructions

1. Marinate the chicken strips in buttermilk for at least 20 minutes to tenderize and flavor the meat.

2. In a bowl, mix the flour, cornstarch, garlic powder, onion powder, paprika, salt, and pepper.

3. Remove chicken from marinade and dredge each piece in the flour mixture, pressing firmly to coat. For extra crunch, dip back in the buttermilk and re-coat in flour.

4. Heat oil in a skillet to 350°F. Fry the chicken in batches for 4–5 minutes until golden brown and cooked through. Drain on a wire rack.

5. Mix together the mayo, sweet chili sauce, honey, Sriracha, and rice vinegar in a bowl until smooth.

6. Toss or drizzle the sauce over the hot chicken just before serving. Garnish with parsley, green onions, or red pepper flakes if desired.

Notes

For best crunch, do not sauce the chicken until right before serving.

You can air fry the chicken for a lighter version—spray lightly with oil and cook at 400°F for 12–14 minutes.

If you want it spicier, increase the Sriracha or add a dash of cayenne to the dredge.
