- 2–3 ripe bananas (about 1 cup mashed)
- 2 cups rolled oats
- 1/2 cup peanut butter (or almond/sunflower seed butter)
- 2–3 tbsp honey or maple syrup
- 1 tsp vanilla extract
- 1 tsp baking powder
- Pinch of salt
- 1/2 cup chocolate chips (plus extra for topping)
- 1/4 cup chopped nuts (optional)
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper.
- In a large bowl, mash bananas until smooth.
- Stir in peanut butter, honey/maple syrup, and vanilla extract until fully combined.
- Add oats, baking powder, and salt. Mix until incorporated.
- Fold in chocolate chips and optional nuts.
- Spread mixture evenly into prepared pan and press down firmly.
- Sprinkle extra chocolate chips on top.
- Bake for 25–30 minutes, until edges are golden and center is set.
- Cool in pan for 10 minutes, then transfer to wire rack. Cool completely before slicing.
