Ingredients

Scale

1 ½ cups mashed ripe bananas

2 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

½ teaspoon salt

1 teaspoon ground cinnamon

½ cup unsalted butter, softened

¾ cup granulated sugar

¼ cup brown sugar

2 large eggs

½ cup sour cream

1 teaspoon vanilla extract

8 oz cream cheese, softened

¼ cup unsalted butter, softened (for filling)

1 ½ cups powdered sugar

1 teaspoon vanilla extract (for filling)

2 tablespoons heavy cream

½ cup chopped walnuts (optional)

Instructions

1. Preheat oven to 350°F (175°C). Grease and line two 8-inch cake pans with parchment paper.

2. Mash bananas until smooth and set aside. Bring cream cheese and butter for the filling to room temperature.

3. In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.

4. In a large bowl, cream together butter, granulated sugar, and brown sugar until fluffy.

5. Add eggs one at a time, mixing well. Stir in mashed bananas, sour cream, and vanilla extract.

6. Gradually add dry ingredients to wet, mixing just until combined. Don’t overmix.

7. Divide batter between pans. Bake 25–30 minutes or until a toothpick comes out clean.

8. Cool cakes in pans for 10 minutes, then transfer to a wire rack.

9. Make filling: Beat cream cheese and butter until smooth. Add powdered sugar and vanilla, then cream. Mix in heavy cream until fluffy.

10. Place one cake layer on a serving plate. Spread filling evenly over it. Add second layer and top with more filling.

11. Smooth top with a spatula. Garnish with chopped walnuts if using.

12. Chill for at least 30 minutes before slicing and serving.

Notes

Use bananas with lots of brown spots for maximum flavor and natural sweetness.

Chill the cake before slicing for clean cuts and a firm filling.

If using walnuts, toast them briefly for extra crunch and flavor.
