Ingredients
4 salmon fillets (6 oz each)
1 lb fresh asparagus, ends trimmed
4 tablespoons unsalted butter, melted
4 cloves garlic, minced
2 tablespoons freshly squeezed lemon juice
1 tablespoon lemon zest
2 tablespoons fresh parsley, chopped (plus extra for garnish)
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 tablespoon olive oil
4 thin lemon slices
Optional: crushed red pepper flakes
Instructions
1. Preheat the oven to 400°F (200°C) and prepare 4 large sheets of foil. Lightly oil each sheet.
2. Trim the woody ends off the asparagus and divide evenly on the foil sheets. Drizzle with olive oil and season with salt and pepper.
3. Place one salmon fillet on top of each asparagus bed, skin-side down.
4. In a bowl, mix melted butter, garlic, lemon juice, lemon zest, parsley, salt, and pepper. Spoon this mixture over the salmon.
5. Top each fillet with a lemon slice and seal the foil packets tightly.
6. Place packets on a baking sheet and bake for 15–18 minutes, depending on salmon thickness.
7. For a crisp top, open foil and broil for 2–3 minutes.
8. Remove from oven, carefully open packets, and let salmon rest for 2–3 minutes. Garnish and serve.
Notes
Always use fresh lemon juice for the brightest flavor; bottled juice can dull the taste.
Seal foil packets tightly to lock in juices and steam cook the salmon perfectly.
Resting the salmon before serving allows the juices to settle, keeping it moist.
