Ingredients

8 oz pasta

1 block feta cheese (about 78 oz)

2 cups cherry tomatoes

1/4 cup olive oil

3 cloves garlic

2 cups fresh spinach

1/2 tsp salt

1/2 tsp black pepper

1/2 tsp red pepper flakes

1 tsp Italian seasoning

1/4 cup fresh basil


Instructions

1. Preheat oven to 400°F (200°C) and prepare tomatoes with olive oil

2. Place feta in center and season everything evenly

3. Bake for 30–35 minutes until tomatoes burst and feta softens

4. Cook pasta until al dente and reserve pasta water

5. Mash feta and tomatoes into a creamy sauce

6. Add pasta and mix until fully coated

7. Stir in spinach until wilted

8. Adjust consistency with pasta water if needed

9. Garnish with basil and serve warm

Notes

Use block feta for best creamy texture

Do not overcrowd tomatoes to ensure roasting

Always reserve pasta water to adjust sauce consistency
