  • 2 medium apples (Granny Smith or Honeycrisp), peeled and diced
  • 1 ½ cups all-purpose flour
  • 2 tsp baking powder
  • 2 tbsp granulated sugar
  • 2 tbsp brown sugar
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 1 large egg
  • ½ cup milk
  • 1 tsp vanilla extract

For the Vanilla Glaze:

  • 1 cup powdered sugar
  • 23 tbsp milk
  • ½ tsp vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. Lightly grease the parchment to prevent sticking.
  2. In a large bowl, whisk together the flour, baking powder, granulated sugar, brown sugar, cinnamon, and nutmeg.
  3. In a separate bowl, whisk together the egg, milk, and vanilla extract until smooth. Pour the wet mixture into the dry ingredients and stir until just combined. Be careful not to overmix.
  4. Gently fold in the diced apples, ensuring they’re evenly coated in the batter.
  5. Drop spoonfuls of batter onto the prepared baking sheet, flattening them slightly with the back of a spoon.
  6. Bake for 15-18 minutes, or until the fritters are golden brown and a toothpick inserted into the center comes out clean.
  7. While the fritters bake, prepare the glaze by whisking together the powdered sugar, milk, and vanilla extract until smooth. Adjust the consistency as needed.
  8. Remove the fritters from the oven and let them cool slightly. Drizzle the glaze over the warm fritters and serve immediately.

  • For an extra crunch, sprinkle chopped walnuts or pecans into the batter.
