Description

Deliciously flaky, packed with spiced apple goodness, and easy to make, these Apple Turnovers with puff pastry are a must-try. They’re perfect for breakfast, dessert, or a snack, with a warm apple filling encased in golden, buttery pastry. Add a drizzle of salted caramel for extra indulgence!

Dough:

1 lb. homemade rough puff pastry or store-bought frozen & thawed puff pastry (2 sheets)

Filling:

2 cups (240g) peeled & diced apples (about 2 medium apples)

1 teaspoon cornstarch

2 teaspoons pure vanilla extract

1 teaspoon ground cinnamon

1/2 cup (100g) granulated or brown sugar (use either)

Egg Wash + Topping:

1 large egg

1 Tablespoon (15ml) milk (any kind)

Optional: 1/2 cup salted caramel, for drizzling


Instructions

  1. Prepare the Dough: If using homemade puff pastry, follow instructions through the second refrigeration. If using store-bought, ensure it’s thawed and keep it in the fridge until needed.
  2. Make the Apple Filling: In a medium saucepan, cook apples, cornstarch, vanilla, cinnamon, and sugar over medium heat, stirring constantly for 5 minutes. Reduce heat to low and simmer for another 5 minutes. Remove from heat and let cool for 20 minutes.
  3. Shape the Dough: On a lightly floured surface, roll out the dough into a 12-inch square. Cut into 4-inch squares (9 squares for homemade, 8 squares for store-bought). Place squares on baking sheets lined with parchment paper.
  4. Add the Filling: Spoon 2–3 tablespoons of apple filling onto each square. Fold over into a triangle, sealing the edges with a fork. Chill turnovers in the refrigerator for 15 minutes.
  5. Bake the Turnovers: Preheat oven to 400°F (204°C). Brush turnovers with egg wash and cut small vents for steam. Bake for 23–25 minutes until golden brown, rotating pans halfway through.
  6. Serve and Store: Cool on baking sheets for 5 minutes. If desired, drizzle with salted caramel before serving. Store at room temperature for 1 day, or in the fridge for up to 5 days.

Notes

  • For an even crispier turnover, bake directly from the refrigerator.
  • Turnovers can be frozen unbaked. Bake from frozen, adding 3–5 minutes to the bake time.
