1 3/4 cups all-purpose flour

1 1/2 teaspoons baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 1/2 teaspoons ground cinnamon

1/2 cup unsalted butter, melted

2/3 cup granulated sugar

2 large eggs

1 1/2 teaspoons vanilla extract

3/4 cup Greek yogurt

1 1/2 cups chopped apples (Honeycrisp or Fuji recommended)

2 tablespoons brown sugar (for topping)

1/2 teaspoon ground cinnamon (for topping)


Instructions

1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners. Peel and finely chop apples, and melt the butter; let it cool slightly.

2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.

3. In a large bowl, mix the melted butter, sugar, eggs, vanilla, and Greek yogurt until smooth.

4. Gradually fold in the dry ingredients until just combined. Stir in the chopped apples gently.

5. Scoop the batter into prepared muffin tins, filling each about 3/4 full.

6. Mix brown sugar and cinnamon topping and sprinkle on each muffin.

7. Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean.

8. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Use room temperature yogurt and eggs for smoother mixing and better rise.

For extra apple flavor, use a mix of apple varieties like Honeycrisp and Granny Smith.

Don’t skip the cinnamon sugar topping—it gives a perfect sweet crunch.
