- 1 lb ground beef (80/20 preferred)
- 4 medium potatoes, diced
- 2 large carrots, chopped
- 1 cup frozen green peas
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
- 1/2 tsp dried thyme
- 2 cups beef broth (warm)
- 1 tbsp flour or cornstarch (optional, for thickening)
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13-inch casserole dish.
- In a large skillet over medium-high heat, brown the ground beef. Drain excess fat.
- Add chopped onion and cook until softened, about 3 minutes. Stir in garlic and cook 1 minute more.
- Season with salt, pepper, paprika, and thyme. Stir to coat. Sprinkle in flour/cornstarch if using.
- Add diced potatoes and chopped carrots. Stir well.
- Pour in beef broth, just enough to cover ingredients. Simmer for 10–15 minutes until veggies begin to soften.
- Transfer mixture to the casserole dish. Sprinkle green peas evenly on top.
- Cover with foil and bake for 30–35 minutes.
- Remove foil and bake uncovered for another 10–15 minutes until top is golden and sauce has thickened.
