1 lb ground breakfast sausage

12 oz cavatappi pasta

1 small onion, diced

2 cloves garlic, minced

1 can (10.5 oz) cream of mushroom soup

1 cup sour cream

1/2 cup milk

2 large eggs

2 cups shredded cheddar cheese, divided

1/2 tsp salt

1/4 tsp black pepper

1 tbsp butter (optional)


Instructions

1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.

2. Cook the pasta in salted water until al dente. Drain and set aside.

3. In a large skillet, cook the sausage over medium heat, breaking it into crumbles. Once browned, add the diced onion and garlic. Sauté until the onion is soft. Drain any excess grease.

4. In a mixing bowl, whisk together the cream of mushroom soup, sour cream, milk, and eggs. Season with salt and pepper.

5. In a large bowl, combine the pasta, sausage mixture, sauce, and 1 1/2 cups of cheddar cheese. Mix until evenly combined.

6. Transfer the mixture to the prepared baking dish. Top with the remaining cheddar cheese and dot with butter if desired.

7. Bake for 35–40 minutes until golden and bubbly.

8. Let rest for 5–10 minutes before serving.

Notes

Use freshly shredded cheese for smoother melting and better flavor.
